Savory Lentil and Tomato Toast

Ingredients Needed

  • 1/2 cup lentils (dry)
  • 1/2 can (4 ounces) diced tomatoes
  • 2 slices of bread
  • 1/4 lemon
  • Salt and pepper to taste

How to Make

  1. Rinse lentils under cool water, combine 1-1/2 cups of water with 1/2 cup of lentils. Bring to a boil and then reduce heat and simmer until tender, about 25 minutes.
  2. Drain any excess liquid. Move lentils to a bowl and stir in the diced tomatoes.
  3. Toast the slices of bread. Spoon the lentil and tomato mixture over the toast. Squeeze a small amount of lemon juice over the top for a bright flavor. Add salt and pepper to taste.
